This Cognac is produced from Grande Champagne wine.
Straight from the still, the eau-de-vie is kept in new Limousin oak casks during 6 to 8 months. Then, it is transferred to older casks, protected from the light. This Cognac has to be aged at least 10 years in oak casks to be called XO. We prefer age it during 10 years more. We finally reduce it in order to get a 40% alcohol product.
Our XO is quoted in the international wine journal Vinum with the following tasting comments :
